What Does "Stable" Blood Sugar Actually Mean? (Glucose CV Explained)

Short answer: "stable" blood sugar isn't about hitting one target number — it's about how much your readings swing around your own average across the day. The standard way to measure that swing is called the coefficient of variation, or CV, and it's calculated from a full day (or longer) of continuous glucose readings, not a single value.
How CV is calculated
CV = (standard deviation of your glucose readings ÷ your average glucose) × 100, expressed as a percentage. It answers a specific question: relative to your own average, how much are your readings bouncing around? Two people can have the exact same average glucose for the day and very different CVs — one with a smooth, gentle curve, the other with sharp spikes and dips that happen to average out to the same number.
Where the 36% threshold comes from
A CV of 36% or below is the threshold widely used to describe "stable" glycemia, based on the international consensus statement on continuous glucose monitoring data interpretation (Battelino et al., 2019). Above that line, day-to-day variability is considered elevated; below it, considered low/stable. This threshold was developed in diabetes care but has been broadly adopted as the standard reference point for describing CGM variability in general metabolic-health contexts too — it's simply the most established number available, not something specific to any one condition.
Why one or two readings aren't enough to calculate it
CV needs a meaningful number of readings to be a reliable signal — a day with only one or two glucose data points produces a CV that's mostly noise, not a real reflection of your variability. A CGM producing readings every few minutes easily clears that bar; a couple of manual finger-stick checks generally doesn't.
What actually lowers CV
- Pairing carbohydrate intake with protein, fat, or fiber rather than eating carbs alone.
- A short walk after meals — one of the most consistently effective, low-effort interventions.
- Consistent sleep and lower stress load, both of which independently affect glucose regulation.
- Spacing meals out rather than frequent grazing, which can keep glucose oscillating all day.
